- Pulse cauliflower florets in food processor until roughly the size of cous cous
- Fill snack cups half way with cauliflower and add 1 tsp butter (or avocado oil)
- Attach snack/steamer lid & microwave 2-3 minutes
- Top with 1 tbsp shredded cheese, crispy bacon & chives, or
- Top with black beans, tomatoes, avocado & cilantro
- Yes peas!
