- Blend 2 eggs, 1/4 cup of cottage cheese and 1/4 cup of shredded cheese
- Stir in 2 tablespoons chopped fresh herbs and pour into 2 snack cups
- Place snack cups in Pyrex dish
- Add 1 inch boiling water and cover with another dish
- Microwave 4 minutes, then allow to sit 2 minutes
- Top with cheese, chives, or a strip of crispy bacon
- Breakfast served!
